"Instant" Scrambled Eggs

As easy as scrambled eggs are, sometimes you don't have the time or energy to mess with a mixing bowl and pan and spatula. Or maybe you just need one egg (especially for your little ones!). Or want individual eggs for sandwiches. That's where this recipe comes in. 

 "Instant" Scrambled Eggs
  • Cooking spray
  • 1 egg
  • 1 tbsp milk
  • Salt & pepper
  1. Coat a small microwavable bowl with cooking spray (alternately you can use butter or oil).
  2. Crack egg into the bowl and whisk briefly.
  3. Add milk and beat until fairly uniform in color.
  4. Season with salt and pepper.
  5. Microwave for 45-60 seconds or until fully set.
 Note: I often double this recipe to make individual eggs for sandwiches for my husband and myself, sprinkling some shredded cheese over the top before cooking. Cooking time doesn't quite double; mine are done in 90 seconds.
