Make Your Own Quesadilla




With toddlers and young children, I find that the more involved they are in making their food, the more likely they are to eat it. So anything make your own is ideal for them. And that's exactly what this recipe is.

Make Your Own Quesadilla
Ingredients (choose whichever filling ingredients your family likes!):
  • Shredded pork or chicken, cooked ground beef or turkey*
  • Shredded cheese*
  • Black beans*
  • Refried beans*
  • Chopped bell peppers*
  • Chopped onion*
  • Chopped apple
  • Chopped peaches or mangoes*
  • Diced green chilis
  • Corn*
  • Sliced/chopped olives
  • Chopped avocado
  • Chopped tomatoes
  • Whole grain tortillas
  • Olive oil
  • Sour cream
  • Salsa
  • Guacamole
Directions:
  1. Place all your filling ingredients into separate bowls. 
  2. Give each member of the family a plate with a tortilla and a spoon. Let everyone scoop their desired fillings onto one half of their tortilla.
  3. Fold the tortilla over to close the quesadilla.
  4. Heat a tablespoon of olive oil in a large pan over medium heat; when the oil is hot add 1 or 2 quesadillas (however many will fit on your pan). Cook until lightly browned and crispy, 2-3 minutes. Flip and cook a few more minutes until the other side is crisped and filling is heated through.
  5. Repeat for any remaining quesadillas.
  6. Top with sour cream, salsa and/or guacamole and enjoy!
Note: Ingredients with an * can be kept in the freezer. Make sure to let any frozen ingredients defrost at least halfway before using or your quesadilla filling could become very watery.
To freeze refried beans, I spoon 1/4-1/2 cup into silicone cupcake liners, freeze and then pop out and store in a labelled freezer bag.
